Excellent flavor in each dish.

When looking at Yucatecan gastronomy, we find that it has its roots in Spain, and because of this the cuisine is very similar to that of some Spanish regions. However, by applying the Mayan spirit in each one, with its ingredients, tastes and trends, this gastronomic culture arises as a product of our miscegenation. This gastronomic fusion took place mainly in convents, such as "La Misión de Fray Diego", in New Spain.

The Arabs brought saffron and rice to Spain in the 10th century. Five centuries later, we in America incorporated them into our cooking style. Paella is the clearest example of this cultural amalgamation that is miscegenation, resulting in a combination of ingredients and traditions from Spain, America and the East in the dishes.

Now, New Spain is the “Other Spain”, and you have to be a judge and take part by visiting us and discovering the magic of colors, smells and flavors that come together when eating in our land.

This is the "Other Spain", in the heart of Mérida, where we hope you enjoy your food in the splendid setting of "El Convento", restaurant of the Hotel La Misión de Fray Diego.
